Turkey Meatballs

I didn’t like the sound of “turkey meatballs” when I first read a recipe for them. First, I’m not a big fan of ground turkey or ground meat in general, but my husband and I are cooking better foods now so I decided to try these. I do have to admit that the recipe is from http://www.oprah.com/. Now, I don’t endorse Oprah and I have very different views than her on a lot of things. However, you have to admit that she has almost unlimited resources to the best chefs in the country….hence why I am drawn to her menus/recipes. These turkey meatballs are protein-packed and a healthier option than most store bought meatballs. I also suggest to use olive oil instead of vegetable oil. If you can, use extra virgin olive oil. They were very delicious and we have leftovers for at least two meals out of what we made. They fill you up fast so you don't need many side dishes to go with these.

Here is the recipe. I also included pictures of my turkey meatball making experience:

Ingredients:
Makes 15–20 meatballs
· 2 pounds ground turkey
· 1 medium onion , chopped
· 1/2 red pepper , chopped
· 1/2 green pepper , chopped
· 3 cloves garlic , chopped
· 2 eggs
· 1 Tbsp. bread crumbs
· 1 tsp. salt
· 1 tsp. ground pepper
· Olive oil or vegetable oil


Heat oil in large skillet (use enough oil to cover just the bottom of skillet). Add onion and stir briefly, until it's almost yellow. Add red pepper, green pepper and fry for 2 minutes. Add garlic and stir for 2 minutes, then remove from stove to cool. Let cool for 10 minutes.






Place flour on a large plate (for ease in creating the balls). With a wooden spoon, mix together turkey, eggs, parsley, salt, pepper, sautéed onions and peppers, and bread crumbs. Form a tablespoon size of the turkey mixture in the shape of ball. Place each meatball in skillet and fry until slightly brown. Slightly press the center of each meatball to make sure the center cooks.

Serve on a platter and sprinkle ground pepper over top of each. They are delicious!


My husband is now getting ready for the game tonight. Apparently it’s the national championships tonight so our home has been converted to football dome like experience. I’ll be giving the boys their bath and putting them to bed then joining him as we watch the game. Join us tomorrow for more blogging!
